The crowning jewel of Skyline’s relaunch is its new signature cocktail collection, aptly named Skies of Venice. This isn’t your average drinks list. Instead, it’s an interactive, sensory-led journey that invites guests to explore cocktails through taste, texture, and mood.

Scan a QR code, and you’re guided to a world of options, where each drink is defined by three characteristics: flavor, feeling, and consistency. The result? A custom cocktail icon that helps each guest find their perfect match. It’s inventive, it’s personal — and it’s rooted in sustainability. Many of the ingredients are locally sourced or zero-waste, including Skyline’s very own Stucky 1975 Venice Gardens Gin and a uniquely created “super lime juice” that uses the whole fruit.

The menu reads like poetry. “Blushing Dawn” whispers of early light and passionfruit foam; “Crimson Flame” burns bold with pepper syrup and Havana rum. “The Last Date” is all warmth and memory with Jameson and date broth, while “Serenissima Glow” floats with champagne cordial and chamomile. Even the whimsically named “Umami Clouds”breaks boundaries — combining tequila, tomato cordial, and a tortilla rim in a daring nod to Venice’s unpredictable weather and eclectic spirit.
