Veranda Brasserie reflects the very essence of the hotel in which it resides—Sans Souci is a five-star boutique hotel known for its seamless blend of luxury, design and Viennese charm. With art at its core (the hotel even houses original works by Roy Lichtenstein and Allen Jones), it’s no surprise that Veranda extends this passion for aesthetics into its dishes.

A Locally Rooted Menu with Seasonal Surprises

The Veranda Menu pays homage to Austria’s rich culinary heritage while embracing contemporary flair. Every dish celebrates local, organic produce, and proudly lists all regional suppliers—an authentic touch that deepens the connection to the land and the people behind it.

Our evening began with freshly baked bread, paired with silky butter and a surprisingly addictive tahini peanut cream—a memorable amuse-bouche that set the tone.

As a vegetarian, I opted for a personalized mix of dishes that sparked my curiosity. The Carrot Hummus, brightened with chickpea chips and tender young peas, was both comforting and refreshingly light.

But it was the Cream of White Asparagus Soup that truly captured the season. Rich, smooth, and elegantly garnished with green asparagus, it was an ode to spring in Austria. For non-vegetarians, the trout roe variation with this soup—and even the optional Austrian caviar—offers an elevated twist.

For my main, I chose a special white asparagus plate (available as a seasonal addition): tender spears with marinated strawberries, verjus stock, and green peppercorns. The flavors danced in perfect harmony—fresh, tart, and faintly sweet. Alongside, the Grilled White Cauliflower was a standout, glazed with maple syrup and balanced by yogurt, Tasmanian pepper, and spiced almonds. Complex and comforting, it showcased the kitchen’s creativity at its peak.

A Dessert Worth the Trip

And then came the grand finale—an unforgettable dessert that alone might warrant a return to Vienna: the Dark Zotter Chocolate Mousse. With a banana core, peanut crumble, and miso banana ice cream, this masterpiece effortlessly fused sweet, salty, and umami flavors. A daring and brilliant creation that proved art truly lives in flavor.
