Occupying a sensitively restored 19th-century property, the hotel marks COMO’s debut in Bordeaux and its third address in France, joining COMO Le Montrachet in Burgundy and COMO Le Beauvallon in the Gulf of Saint-Tropez. More than a conventional hotel opening, however, COMO Cordeillan-Bages represents a meeting of two family-owned institutions united by a respect for craftsmanship, discretion and lasting quality. This unique experience at COMO Cordeillan Bages is a true reflection of the region’s rich heritage.

The project was developed in close collaboration with the Cazes family, owners of the celebrated Château Lynch-Bages. Their long-standing presence in Pauillac gives the hotel an authentic connection to the region and its culture, while COMO brings its distinctive approach to contemporary hospitality and wellbeing. The result is a destination that feels firmly anchored in the Médoc rather than simply placed within it.

A new gastronomic landmark for Bordeaux

Food and wine form the heart of the experience at COMO Cordeillan-Bages. Culinary direction has been entrusted to Fabien Ferré, one of the most closely watched figures in contemporary French gastronomy. In 2024, Ferré made history when La Table du Castellet in Provence was awarded three Michelin stars, making him the youngest chef to progress directly from zero to three stars.

At the hotel’s signature restaurant, Le Cordeillan, Ferré brings his precise and expressive culinary philosophy to the produce and traditions of southwestern France. His cooking is led by seasonality and locality, allowing ingredients to retain their identity while being elevated through elegant, technically accomplished preparation.

Ferré has appointed Mathieu Martin as executive chef to translate that vision into the restaurant’s daily rhythm. A native of southwest France, Martin brings an instinctive understanding of the region and close relationships with local producers. Together, the chefs have created a culinary identity influenced not only by the vineyards surrounding Pauillac, but also by the nearby Atlantic Ocean.

Marine and vegetable flavours take centre stage, with local fish, shellfish and seasonal produce forming the foundation of the menus. Meat is used more selectively, appearing as a discreet acknowledgment of regional tradition rather than the restaurant’s dominant expression.

Guests can choose from menus of three, four or six sequences at lunch and dinner, alongside an à la carte selection. The offering changes every two to three months, responding to the arrival of new ingredients and the evolving inspiration of the kitchen. Among the signature creations are Atlantic turbot accompanied by asparagus, shellfish and lovage, and a Gillardeau oyster paired with turnip, sorrel and radish.

A cellar worthy of the Médoc

In a region where wine is inseparable from identity, the hotel’s cellar is as important as its kitchen. More than 1,600 references celebrate the great appellations of Bordeaux, with Château Lynch-Bages naturally holding a prominent place.

The collection also extends beyond the most famous labels to include smaller cuvées from carefully selected estates, chosen for their individuality and expression. Rare bottles add another dimension to the cellar, among them a 1961 Château Lafite Rothschild and a 2000 Montrachet Grand Cru.

Rather than presenting the cellar as an intimidating catalogue of prestigious names, the sommelier team guides diners through thoughtful pairings tailored to the progression of each menu. The intention is to create a dialogue between glass and plate, revealing the Médoc through both its wines and its ingredients.

COMO Cordeillan-Bages is the brand’s second wine-focused hotel in France after COMO Le Montrachet. Together, the two properties establish a compelling journey between Burgundy and Bordeaux, exploring two of France’s most influential wine regions through hospitality, gastronomy and a strong sense of place.

Paola Navone reimagines a historic château

The interiors have been redesigned by acclaimed Italian designer Paola Navone, whose approach balances the building’s 19th-century heritage with a fresh sense of clarity. Rather than reproducing a traditional château aesthetic, Navone has introduced a restrained palette of grey, white and metallic blue.

Lime-washed walls, tactile textiles and custom-designed furniture give the spaces warmth and individuality, while the overall atmosphere remains calm and understated. The result feels contemporary without erasing the history of the property.

This design language continues inside Le Cordeillan, where abundant daylight, soft neutral colours and textured finishes allow the cuisine and surrounding landscape to command attention. Monochrome ceramic centrepieces by artist Benoît Breymand provide a subtle sculptural detail without overwhelming the tables.

A vineyard-facing terrace brings guests directly into the Médoc scenery, creating an inviting setting for long lunches and warm evenings. The Living Room and Bar offer a more relaxed interpretation of the hotel’s elegance, designed for a glass of wine, an aperitif or quiet conversation after dinner.

The property’s 28 spacious rooms and suites include two signature COMO Suites. Throughout the accommodation, the quiet sophistication of rural Bordeaux is combined with COMO’s signature qualities of warmth, simplicity and enduring comfort.

Wellness among the vineyards

Although wine and gastronomy define much of the hotel’s identity, wellbeing remains integral to the COMO experience. Guests are introduced to the award-winning COMO Shambhala philosophy through facilities that include a 25-metre heated outdoor swimming pool, a fully equipped gym and a sauna.

In-room wellness amenities make it possible to incorporate restorative rituals into a stay without interrupting the unhurried pace of life in the Médoc. A morning swim, time in the sauna or a quiet pause overlooking the vines provides a natural counterpoint to château visits and tasting menus.

Discovering Pauillac and the wider Médoc

Experiences at COMO Cordeillan-Bages extend deep into the surrounding landscape. Guests can cycle along vineyard paths, visit renowned estates or explore the legendary Route des Châteaux, which passes some of the most important names in Bordeaux wine.

Three of Bordeaux’s five Premiers Crus Classés are within easy reach: Château Lafite Rothschild, Château Latour and Château Mouton Rothschild. Through the hotel’s partnership with Château Lynch-Bages, guests also receive privileged access to complimentary daily group tastings, while bespoke private visits can be arranged for an additional cost.

Those seeking a more immersive understanding of winemaking can participate in VINIV, a personalised experience offering access to vineyard parcels across Bordeaux. Guided by the Cazes family’s technical directors, participants create their own blend, which is then aged in barrels at Bages. They can subsequently design a label before receiving the finished wine in bottles — a highly personal souvenir of the Médoc.

The region’s appeal extends beyond its vineyards. The restored village of Bages is only a six-minute walk from the hotel, while pine forests and Atlantic beaches lie approximately 30 kilometres away. This proximity allows guests to combine wine-country refinement with the wilder natural landscapes of southwestern France.
