Served with chorizo powderspinach from Japanzucchini carpaccio, and a bouillabaisse-chorizo sauce, this is a dish that defies expectations. “We wanted something that ignites curiosity on the palate,” Chef Ivan shares. “The anchovy-marinated zucchini, capers, and citrus all add brightness to the rich, spicy backdrop.”

Vegetarian offerings are equally well-thought-out, with dishes like a melt-in-your-mouth Aubergine Parmigiana and a creamy Artichoke Risotto scented with Cynar—a quintessentially Italian bitter liqueur made from artichokes.
